  • Italian Potato Frittata

    Today we’re making a classic Frittata di Patate, a simple Italian dish made with eggs, potatoes, and cheese.

    Perfect for using leftover roast potatoes or even chips, this recipe is quick, affordable, and full of flavour.

    Ingredients

    • 4 eggs
    • 6 small to medium potatoes (leftover or freshly cooked)
    • 70 g cheddar cheese
    • Salt & black pepper
    • Oil (sunflower, vegetable, or olive oil)

    Equipment you’ll need

    Method

    1. Crack the eggs into a bowl, season with salt and pepper, and whisk until smooth.
    2. If using fresh potatoes, peel and cut into small cubes (1–1.5 cm) and boil in salted water until just tender. Drain and set aside.
    3. If using leftovers, simply cut into bite-sized pieces.
    4. Heat oil in a non-stick pan over low to medium heat.
    5. Pour in the eggs and after about 30 seconds, add the potatoes evenly.
    6. Sprinkle grated cheese over the top and add a little extra pepper.
    7. Transfer the pan under a grill at 180°C for about 6 minutes, until golden on top.
    8. Remove carefully and place on kitchen paper to absorb excess oil.
    9. Serve warm with a salad or on its own.

    Tips

    Great for using leftover roast potatoes or chips

    Add a splash of vinegar when boiling potatoes to keep them firm

    Cook on low heat to avoid burning the base

    Variation

    Use Grana Padano, Pecorino, or Mozzarella instead of cheddar

    Add onions or herbs for extra flavour

    Make it thicker for a more filling version

    Storage

    If made with recycled potatoes need to go straight away, Starting from fresh potatoes it keeps well in the fridge for up to 2 days. Perfect for lunchboxes or picnics.

    Walnut Creamy Pasta

    A deliciously creamy pasta dish made with blended walnuts, garlic, and olive oil. This recipe is simple, satisfying, and full of earthy flavor — perfect for a quick weeknight meal or a comforting weekend dinner.

    Ingredients

    • 200g pasta
    • 180 gr of Walnut
    • Garlic
    • Parslay 
    • 20 – 30 gr Grana Padano
    • Olive Oil
    • Salt and pepper
    • Chillies – dry of fresh

    Equipment you’ll need

    Method

    1. Bring a pot of salted water to the boil.
    2. Boil the walnuts for 3–5 minutes to soften them and reduce bitterness. Drain, dry, and let them cool.
    3. Blend the walnuts into a smooth, creamy paste.
    4. Cook the pasta according to package instructions.
    5. In a pan, heat olive oil and sauté the garlic until golden. Remove if needed to avoid bitterness.
    6. Add chilli (optional), then stir in the walnut cream.
    7. Add 1–2 ladles of pasta cooking water and mix to create a smooth sauce.
    8. Drain the pasta and add it to the pan.
    9. Toss well until fully coated and creamy.
    10. Serve with grated Grana Padano and fresh parsley.

    Tips

    Boiling walnuts helps remove bitterness and improves texture

    Use pasta water to emulsify the sauce

    Don’t burn the garlic — it will turn bitter

    Variation

    Add cream for extra richness

    Replace Grana Padano with Parmigiano Reggiano

    Make it vegan by skipping the cheese

    Storage

    Best enjoyed fresh. If needed, store in the fridge for 1 day and reheat with a splash of water.
